Food Swings: Strawberry Spinach Salad

Hello again, fellow eaters. I trust everyone survived our little heat wave without too much permanent brain damage or violent outbursts. I don’t like the heat very much. It puts me in a bad mood and makes it hard to cook because I don’t want to turn on my oven for risk of making it even warmer in my life.
However, the heat does put me in the mood for eating salad which, trust me, isn’t going to hurt me at all. We’re going to prepare an awesome strawberry spinach salad today with a homemade vinaigrette.
You will need:
2 tbsp. strawberry jam
3 tbsp. olive oil
1 tbsp. balsamic vinegar
1 tsp. cracked black pepper
1 cup sliced fresh strawberries
¼ cup candied walnuts
½ cup forest mushrooms sliced very thin
½ cup red union julienned very thin
½ pound spinach
Wisk together jam, olive oil, vinegar, and pepper. Toss together strawberries, walnuts, mushrooms, onions, and spinach.
Toss dressing with spinach immediately before serving.
Wash this down with a light acidic beer such as Point Nude Beach, O’so’s the Big O, or Leinenkugel’s Honeyweiss.
