Food Swings – Porchetta Roast

You will need:
3 lb pork loin
Salt and Pepper
¼ cup fresh chopped parsley
8 sage leaves, finely chopped
10 cloves finely chopped garlic
Preheat oven to 400.
Carefully butterfly the pork loin into a ½ inch thick slab. Rub both sides with olive oil and season with salt and pepper. Place pork fat side down and rub with parsley, sage and garlic. Role pork up tightly and tie with butcher string.
Place pork on a roasting rack and place in oven, cooking for 40 minutes, or until internal temperature of roast comes to 150.
Remove from oven and allow pork to rest for 10 minutes before cutting into ¼ inch slices.
Serve with parsley buttered red potatoes.
