Food Swings: Greek Style Pork and Peppers

Hello fellow eaters, I hope the cool weather finds you comfortable and happy.
A few years ago, I studied abroad in Greece. It was a great experience and I got to spend weeks exploring, eating and drinking. Among one of the many highlights, beyond the food and wine, was the fact that I met my wife who also happened to be on the trip.
While there, I had a wonderful dish of rotisserie roast pork and peppers. Unfortunately, I live in a tiny apartment and don’t own awesome cooking equipment so I’ve adapted this recipe for easy preparation in the home.
You will need:
4 1/2 inch boneless pork chops
3 bell peppers julienned
1 yellow onion julienned
2 cloves chopped garlic
1 tsp oregano
2 tbsp olive oil
Salt and Pepper
Preheat oven to 400.
Season pork chops on both sides with salt and pepper. Brown pork on both sides in 1 tbsp olive oil in a heavy skillet over medium heat.
While the pork is browning, combine peppers, onions, oregano, garlic salt and pepper and remaining oil in a bowl.
Add peppers mix to skillet and place in oven for 30 minutes.
Serve with a side of rice.
