Food Swings – Chicken Meatballs

Hello, fellow eaters. I had some free time this week and was able to bring out some equipment I’m usually too busy to use, and one that I hate cleaning: my meat grinder.
I was sitting in my kitchen, staring at some boneless, skinless chicken breast, wondering what on earth to do with this boring, dry piece of meat. Then, like a voice from above, I looked to my right and saw my meat grinder. “AHA!!!”
I bolted my grinder in and turned my boring chicken breasts into pliable, multi use ground chicken for meatballs or sausage.
You will need:
1.5 lbs ground chicken breasts
¼ cup olive oil
½ cup bread crumbs
2 tsp. salt
1 tsp black pepper
t tsp ground sage
½ tsp red pepper flake
3 cloves minced garlic
2 tbsp chopped fresh parsley
Combine all ingredients in a bowl and allow to rest for 2 hours in order to mingle flavors.
Preheat oven to 400 degrees.
Roll chicken mixture into 1 inch balls and place on greased baking sheet.
Place and oven and cook for about 25 minutes, until meatballs reach internal temp of 160.
Serve with barbeque or ginger soy sauce.
