Food Swings: Stuffed Peppadews

Hello, fellow eaters.
As fellow Wisconsinites, I think it’s safe to assume that we all love cheese. We fry it, we grill it between bread, we melt it on everything and we stuff it in things. As the dairy state, we mostly use cow cheeses like your cheddars and mozzarellas. Those are all well and good, but they can be a little boring and sometimes I need a little slap in the face.
A common dish at many tapas restaurants are stuffed peppadews. A peppadew is a sweet, pickled piquante pepper and they can be found in most grocery stores in the pickle section, probably close to the olives.
You will need:
1 jar peppadews, drained
6 oz. goat cheese
1/2 cup sour cream
1 tsp. cracked black pepper
1 tsp. chopped garlic
1/2 tsp. kosher salt
1 tbsp. chopped fresh parsley
In a mixing bowl, whisk together the cheese, sour cream and spices. While cheese mix is still soft, spoon into a pastry bag or a ziploc bag with a corner tip cut off.
Place the peppadews open side up on a platter and carefully squeeze into each pepper until loosely full.
Serve with an ice cold martini.
