Food Swings: Beef Jerky and Apple Stuff Pork Chops

Hello, fellow eaters. I hope your holiday season is finding you well. I tried to do some Christmas shopping today, but gave up after crossing off the first two people on my list: the stores are too busy, it’s too cold and my car door doesn’t close properly. So overall, not a great day for me to do anything other than cook.

Once, in the middle of some winter doldrums, I got a little crazy with some pork chops and beef jerky, so I’m going to go ahead and give you the recipe now.

You will need:

4 one inch pork chops, with a deep slit in the middle for stuffing
1 granny smith apple chopped
4 oz. beef jerky chopped
1/2 yellow onion, chopped
Salt and Pepper
2 tbsp butter

Preheat oven to 400.

Over medium heat, cook the apples, onions and beef jerky together in the butter, lightly seasoned with salt and pepper. Cook until the onions and apples are softened. Remove from heat and allow to cool.

Carefully spoon jerky apple mixture loosely into the pork chop hollow. Place in a roasting pan and bake in oven for 30 minutes, or until internal temperature of pork reaches 145 degrees.

Remove and serve on a bed mashed potatoes.
