Food Swings: Deviled Easter Eggs

By Patrick Lynn
This fun twist on deviled eggs is a favorite for my nieces each Easter. It’s also very simple to prepare.
Boil a dozen eggs for about ten minutes, then soak eggs in ice bath for 30 minutes. Shell.
Slice each egg in half length-wise, scooping out yolks into a separate bowl. Mash the yolks, and mix with mayonnaise and apple cider vinegar to taste. Whip.
To color the egg whites:
Mix 1/2 cup water with 1 tablespoon cider vinegar and 3-5 drops food coloring in small bowls or plastic cups. Drop your egg whites in each color and let stand until they reach your desired color.
Fill with your egg mixture and display on your favorite Easter plate. They’re almost too good- looking to eat!
