Food Swings: Hash Brown Potato Bake

Hello, fellow eaters. All family dinners have some kind of food tradition: some, like mine, delight in dry turkey that requires a boatload of gravy just so it will slide down. Some have famous pie-makers, and others have that one uncle that shows up with a can of peas as his contribution.

One tradition I actually enjoy, whether it’s during a holiday meal or a regular Sunday dinner- is our hash brown potato bake. It’s full of cheesy, creamy goodness and goes great with a side of Lipitor.

You will need:

2 lb. bag frozen hash brown potatoes
2 tsp. black pepper
1 can cream of chicken soup
2 cups shredded cheddar cheese
½ cup melted butter
1 tsp. salt
½ cup chopped onion
12 oz. sour cream
Paprika

Preheat oven to 350 degrees.

Thaw the potatoes and combine with all the other ingredients except paprika.  Pour mixture into a buttered 9”x13” baking dish.  Sprinkle top with paprika and place in oven.

Bake for one hour.  This dish also works prepared a day ahead of time, which is a great boon for holiday preparations.

Enjoy with all your other holiday or any day meals.
